Hey folks! A lot of you ask for the recipe whenever I post a parfait on my Instagram page and I have finally come up with a super delicious parfait recipe for you all in collaboration with The Honest Pantry and their delicious almond butter! I hope you all love it as much as I do, and please snap a pic and tag me if you give it a go, I'd love to see your recreations!
120g short grain white rice
460g soy milk
40g Honest Pantry Almond Butter
0.5 tsp vanilla extract
10g maple syrup
For serving: Raspberry jam
Add all ingredients to a pot and simmer for 15 minutes on low heat, stirring occasionally to prevent it from sticking to the bottom. Feel free to add some extra liquid if the mixture gets too dry and starts burning.
Turn the heat off, cover the pot with a lid and leave to rest for 10 minutes before layering with raspberry jam, almond butter and coconut yoghurt.
