It's no secret that I'm a huge fan of the blueberry + cardamom flavour combo, and this overnight oat parfait with delicious yoghurt, granola and nut butter definitely hit the spot. This breakfast can easily be made in a jar with a lid so you can bring it to work the next day, or you can enjoy it at home. 40g mashed ripe banana
30g frozen wild blueberries (or bilberries as they're also called)
160g soy milk
10g vegan caramel protein powder (can sub for a splash of maple syrup)
A few spoonfuls coconut yoghurt
a few spoonfuls peanut butter
Fresh berries of choice
A handful of granola
Method: Simply add all ingredients to a bowl and place in the fridge for at least a few hours or overnight to soak. Serve by layering in a glass with some coconut yoghurt, nut butter, fresh fruit and granola.
