Blueberry Cardamom Overnight Oats

It's no secret that I'm a huge fan of the blueberry + cardamom flavour combo, and this overnight oat parfait with delicious yoghurt, granola and nut butter definitely hit the spot. This breakfast can easily be made in a jar with a lid so you can bring it to work the next day, or you can enjoy it at home. Ingredients:

40g oats

40g mashed ripe banana

30g frozen wild blueberries (or bilberries as they're also called)

160g soy milk

1/4tsp cardamom

10g vegan caramel protein powder (can sub for a splash of maple syrup)

A few spoonfuls coconut yoghurt

a few spoonfuls peanut butter

Fresh berries of choice

A handful of granola


Method: Simply add all ingredients to a bowl and place in the fridge for at least a few hours or overnight to soak. Serve by layering in a glass with some coconut yoghurt, nut butter, fresh fruit and granola.
