Blueberry Crumble Smoothie Bowl
This is a smoothie bowl suited for the colder season. You know those days when you have a fire burning or your curled up under the blankets but still want something refreshing yet cozy for breakfast. It's also simple to make and super delicious!
Smoothie bowl base:
200g frozen banana
70g frozen blueberries
15g vegan protein powder (I suggest using a vanilla or caramel flavoured one, but you can also use vanilla extract)
a pinch cardamom + cinnamon
2tsp lemon juice
Crumble topping: 15g quick oats
8g vegan butter
10g maple syrup
10g all purpose flour
mix and toast over medium-high heat until golden and fragrant
Mix all ingredients for the crumble topping and toast in a pan over medium-high heat until golden and fragrant. Set the crumble aside to cool. Add all ingredients for the smoothie bowl to a high speed blender or food processor and blend until completely smooth. Transfer to a bowl and top with the crumble mixture and any other toppings you might like.
