I realised late last year that I did in fact not have a recipe for blueberry oats on my blog, despite me making it all the time! So finally, here it is, the most colourful oatmeal recipe of them all. NOTE: I use Norwegian wild blueberries in this recipe, these are also known as bilberries. If these aren't available where you are regular blueberries are just fine but will not leave the same colourful result.
Ingredients: 40g quick oats
15g vegan vanilla protein
45g frozen blueberries (bilberries)
100g soy milk
10g maple syrup
a pinch of cardamom
a pinch of salt
Method: Add all ingredients to a saucepan and simmer on low-medium heat until it reaches your desired texture. Add more water or soy milk if you find it gets too thick. Serve in a bowl with your favourite toppings! I like vegan chocolate, maple syrup, banana, blueberries and peanut butter on mine.
