Eggnog smoothie bowl
Confession: I've never actually had proper eggnog as it was never a thing where I grew up in Norway and I turned vegan before I had the chance to try the real thing! I'm a huge fan of nutmeg however and have really grown to love the vanilla/nutmeg flavour profile of it and making vegan eggnog-flavoured dishes around the festive season. This bowl is definitely up there as one of my faves so I highly recommend giving it a go!
300g frozen banana
15g vanilla protein powder
0.5tsp freshly grated nutmeg
15g cashew butter
a pinch of salt
Suggested toppings: Granola, coconut yoghurt, cashew butter, banana, strawberries
Simply add all ingredients to a blender, blend until super smooth and creamy. Add some granola to the bottom of the bowl if you wish, add your smoothie on top and top with more granola and the rest of your toppings. Enjoy!
