Homemade Cashew Butter
The easiest recipe you'll ever try? Possibly. This delicious spread only requires 2 ingredients: cashews and salt. And the best part? It's probably the best spread you'll ever have. Get your high speed blender or food processor out and let's get cooking!
Ingredients: 250g unsalted cashews
a pinch of salt
Method: Spread your cashews onto a baking tray lined with parchment paper and roast at 200C for 5-7 minutes until they're lightly toasted. Let them cool for a while before adding to a high speed blender or food processor with a pinch of salt. Blend until super smooth, then blend a few more minutes (literally the longer the better, so if you think you're done, keep going just a bit more). Transfer the cashew butter to an airtight jar and enjoy on oatmeal, smoothie bowls, toast or anything else you might want!
