Mango Oatmeal Parfait

This parfait may look a little fancy, but trust me it is so darn simple to make! I highly recommend this as a great make-ahead summery breakfast that is sure to refresh you and give you a great start to any warm, sunny day.


Ingredients

50g quick oats

15g chia seeds

150g oat milk

10g vegan vanilla protein powder

1 mango

1 passion fruit

1/2 kiwi fruit


Method: Mix oats, chia seeds, oat milk and protein powder in a bowl and refrigerate overnight. Chop up 1 mango and add to a blender or food processor. Blend until smooth. Layer the oat mixture with the mango puree in a jar, top with passion fruit and kiwi fruit and enjoy!
