Peanut Butter and Jelly Oatmeal Bars

Happy World Vegan Day!! I made this recipe in collaboration with Barkers of NZ to celebrate and I gotta tell you it is oh so yummy. Perfect whether you're looking for a breakfast on the go or a sweet treat. I hope you all give it a go, if you do please tag me in any photos so I can see your creations!




Ingredients

Oat layer

150g mashed banana

1 flax egg (1tbsp flax meal mixed with 3 tbsp water

50g Peanut butter

25g raw sugar

40g almond milk

A generous pinch of salt

½ tsp cinnamon

100g oats

80g whole wheat flour

1tsp baking powder


Jam layer 330g Barker’s three berry jam


Crumble 50g whole wheat

20g oats

15g Syrup

15g plant based butter alternative or coconut oil

¼ tsp Cinnamon

A generous pinch of salt



Mix all your wet ingredients and spices well before stirring in your oats, flour and baking powder. Flatten the mixture into a square baking tin (approximately 20x20cm) lined with parchment paper and bake for 7 min at 200C. while it is baking, add your crumble ingredients to a bowl and use your fingertips or a fork to mix until the texture resembles sand. Try to prevent the vegan butter from melting. Then, take your tin out of the oven and add your jam and sprinkle the crumble mixture on top. Bake for another 15 minutes and leave to cool completely before slicing. Serve up with some more peanut butter, jam and coconut yoghurt.
