Peanut Rice Noodle Salad

Fresh, summery and super duper flavourful. This noodle salad is probably one of my favourite salads and I highly recommend you try it out for yourself. The recipe is super flexible so feel free to add in any kind of veggies that you would like!



Ingredients

100g Rice noodles

80g cucumber

1 medium carrot

70g red cabbage

60g cos lettuce

sauce


Marinated tempeh 150g tempeh

1 tbsp soy sauce

0.5 tsp coriander

⅛ tsp pepper


Peanut Sauce

20g soy sauce

35g peanut butter

1 tsp sesame oil

1 clove garlic

10g maple syrup

1 tsp lime juice

20 ml water


Start by preparing your tempeh. Cut the tempeh into cubes and marinate for 15 min in a shallow dish. Bake in the oven at 200 degrees for 20 minutes

Use a peeler to slice your carrot into ribbons. Cut your cucumber into sticks and thinly slice your lettuce and cabbage. Cook your rice noodles according to package instructions. Mix together all ingredients for the sauce in a small bowl. Assemble in a large bowl and enjoy!
