I mean it would be a shame to go another year without uploading a pumpkin spice porridge recipe to the blog wouldn't it? I feel like any food blogger with a love for pumpkin and porridge should have one of these haha.Since pumpkin spice mix is not readily available in Australia (or many other places) I've simply added in all the spices that are usually in the mix separately, but if you have pumpkin spice feel free to substitute the spices for 1-1,5 tsp of that.
This recipe is also quite light on the spice so feel free to double the amount of spices if you want it to be stronger!
Ingredients 40g quick oats
240g plant milk
10g vanilla/caramel protein powder
50g pumpkin puree
1/8tsp (or a pinch) ginger
1/8tsp (or a pinch) cloves
a pinch of salt
Cook all your ingredients together in a saucepan for a few minutes, mashing the banana until incorporated. Once it has reached your desired consistency add to a bowl and serve with your preferred toppings. I enjoyed this with peanut butter, pumpkin seeds, hemp seeds, blueberries and maple syrup.
