Sweet Potato Latte Porridge

These sweet potato latte oats are creamy, warming, sweet and utterly DELICIOUS. If you're into sweet potato and/or sweet potato lattes this is definitely the breakfast for you!

Hot tip: you can also prepare the sweet potato in advance to speed up the process of cooking them in the morning.


Ingredients:

100g sweet potato

220g plant based milk*

40g quick oats

½ tsp cinnamon

1/2tsp vanilla

*I used a sweetened version, but you can also use an unsweetened one and add maple syrup/sugar to taste.


Method:

Bake a sweet potato until tender. Peel and blend 100g of the flesh with milk, cinnamon and vanilla. Add to a saucepan with quick oats. Simmer for a few minutes until the porridge reaches your desired consistency. Serve with granola, nut butter, choc, walnuts and maple syrup. Enjoy!
