Perfect for pasta, as a spread, on pizza or in baked goods. There are so many ways to enjoy pesto, and in my opinion pesto is best when fresh and homemade! Here's a staple recipe for a delicious vegan pesto to keep on hand for any occasion.
40g fresh basil leaves
40g pine nuts
1,5 tbsp olive oil
1 tbsp water
salt to taste
3 cloves garlic
1tsp nutritional yeast (optional)
Add basil and a pinch of salt to a mortar and mash with a pestle until you have a paste. Add garlic and mash again until the garlic cloves are crushed. Add pine nuts and mash until you have a paste where all ingredients are well combined. Add nutritional yeast and olive oil and combine. Add water to thin it out if needed to reach your desired texture. Season with salt to taste and your pesto is done! Store in the fridge in an airtight container, it should stay good for up to a week.
